Terri Lynn Recipes Brown Sugar Walnut Chicken

This easy weeknight dinner is the perfect blend of sweet, savory, and a little spicy! Featuring our delicious Black Walnut Pieces.

Ingredients

  • 15 oz Chicken meat (light or dark)
  • ½ cup Chopped onion
  • ½ cup Chopped red pepper
  • Olive oil (3T + 3T)
  • ¼ cup Brown sugar
  • 2 tbsp Red wine vinegar
  • ¼ cup Soy sauce
  • 1 tbsp Dijon mustard
  • 2 Garlic cloves, minced
  • Pinch of red pepper flakes
  • ½ cup Terri Lynn Black Walnut Pieces

Directions

  • Cut the chicken into bite sized pieces.
  • Heat 3T olive oil in a large pan over medium heat.
  • Season the chicken lightly with salt and pepper to taste.
  • Add the chicken into the pan and cook for 3-4 minutes, stirring occasionally. Don't cook the chicken all the way through. Remove from the pan.
  • In a small bowl, mix the other 3T oil, brown sugar, vinegar, soy sauce, dijon mustard, garlic, and red pepper flakes.
  • Reheat the pan the chicken was cooked in over medium heat. Add the onions, peppers & walnuts into the pan. Cook for 2-3 minutes on high.
  • Add the sauce.
  • Add the chicken back into the pan.
  • Cook until the sauce thickens and the chicken is well coated. Stir frequently.
  • Remove from heat and serve. (Delicious with steamed white rice!)
