Terri Lynn Recipes Pecan Chocolate Chip Ice Cream Cookies
Try this easy (but impressive!) dessert. Featuring our Fancy Pecan Pieces.
Ingredients
- ½ cup Butter (softened)
- ½ cup Granulated sugar
- 1/4 cup Brown sugar (packed)
- 2 tsp Vanilla extract
- 1 Egg
- 1 3/4 cup All-purpose flour (sifted)
- ½ tsp Baking soda
- ½ tsp Salt
- 1 cup Semisweet chocolate chips
- ½ cup Terri Lynn Fancy Pecan Pieces
- 6 cups Vanilla ice cream
- 1 cup Additional Terri Lynn Fancy Pecan Pieces (for rolling around the sides)
Directions
- In a large bowl, mix softened butter with the sugars until well-combined.
- Stir in vanilla and egg.
- Add the flour, baking soda, and salt, mix dough until just combined.
- Stir in chocolate chips & 1/2 cup of nuts.
- Scoop 2 inches apart on baking sheet.
- Bake for 7-10 minutes, or until cookies are set. They will be puffy and still look a little underbaked in the middle.
- Freeze cookies for 10 minutes.
- Assemble ice cream cookie, by pressing 1/2 cup ice cream in between 2 cookies, and roll the sides in Terri Lynn Fancy Pecan Pieces.
- Store in freezer.
