Terri Lynn Recipes Pumpkin Spice Pecan Cake

Savor the flavors of fall in this sweet, spicy cake! Featuring our newest seasonal product Pumpkin Spice Pecans.

Ingredients

  • 1 Egg
  • 2 tsp Vanilla extract
  • 1 cup Canned pumpkin
  • 1 tbsp Vegetable oil
  • 1 tbsp Pumpkin pie spice
  • Dash salt
  • 2 tsp Baking powder
  • ¾ cup Sugar
  • 1 ½ cups Flour
  • ½ cup Terri Lynn Pumpkin Pecans, chopped
  • 2 cups Whipped topping
  • 1 cup Confectioners sugar
  • ½ cup Additional Terri Lynn Pumpkin Spice Pecans (for decorating top)

Directions

  • Mix egg, vanilla, canned pumpkin, oil, pumpkin pie spice, salt & baking powder.
  • Mix in sugar.
  • Mix in flour.
  • Fold in chopped pecans.
  • Spread in greased 8x8” pan.
  • Bake at 350 degrees for about 15 minutes.
  • Let cool completely.
  • Mix whipped topping with confectioners sugar and spread over cooled cake.
  • Top with whole Terri Lynn Pumpkin Spice Pecans.
